Quick lunch idea: Orzo gratin

Here is my quick lunch idea for you today. Your basic ingredient is Orzo pasta, or kritharáki as it is called in Greece. Orzo looks like rice but it really is pasta made from wheat. Count about 15 min to prepare this meal and 20-25 min to bake it in the oven. It’s a mishmash of veggies, cheese and pasta. You can easily substitute the Orzo with any other pasta or rice. Voila ,enjoy:

Orzo gratin

Ingredients (serves 2):

200 g orzo

2 teaspoons green pesto (optional but adds great flavor)

1 small onion, diced

2 garlic cloves, diced

250 g/ 1/2 lb spinach, can be frozen spinach

1 tomato

1,5 cups grated cheese, can be pizza cheese but Gruyere or Edamer are preferred

1/2 cup milk

optional: roasted almond slices or splitters


1) In a small pan, boil the Orzo in salted water for about 15 min. Meanwhile, start preheating your oven.

2) Dice your onion, garlic, and tomato.

3) Prepare a small lasagna baking pan. As soon as the Orzo is cooked, mix it in the pan together with the pesto and the diced tomato pieces.

4) In a small frying pan, stir fry the onion, the garlic and the spinach. Onion and garlic come first until they are golden; then add the spinach for a few minutes until it has shrunk (fresh spinach leaves) or defrosted (frozen spinach).

5) Add the spinach to the Orzo mix and combine. Pour over the milk and blend in half of the cheese. If you like almonds, add about a quarter cup and mix them in as well.

6) Cover with a layer of cheese and bake in the oven for 20-25 min at 230 degrees Celsius/450 Fahrenheit.
